
Processing Factory
The Mures factory has a fish filleting and processing line. There is a 10-tonne cold room that maintains our fresh product at 0°C, a two-tonne snap freezer for freezing product as quickly as possible to ensure a quality frozen product and 10-tonne holding freezer for holding our other frozen products at minus 20°C. There is a modern smoker with a separate smoke-box which uses 12-month-old air-dried Tassie oak sawdust. It is capable of smoking 100kg of either hot or cold smoked product a day and no artificial chemicals are used. In 1995 Mures decided to find ways of recycling the blue eye heads and frames. This fish makes excellent fumet (fish stock). Having tried frozen soups with only limited success it was decided to try pasteurising the soup. This led to our new range of seafood soups and once again Mures had pioneered a new form of processing seafood. Mures Classic Gourmet Soups were the first commercial UHT seafood soups in the world and are Mures leading export product.
