Polyprion oxyeneiosSize: To 180 cm and 70 kg (commonly marketed at 80 – 120 cm and 7-30 kg). Habitat: Marine; mainly demersal over deep coastal reefs and canyons of the continental slope, to a depth of around 450 m. Fishery: Usually caught as a bycatch of longline boats operating out of southern Australia, although recently catch sizes have increased. Remarks: Among the most highly priced seafood on the market. Widely enjoyed because of its firm; flavorsome flesh. Domestic: Chilled and packed for transport in random weight bags or 15 kilo poly boxes. Frozen, layer packed in 10 kilo shatter pack cartons. Fish Cuts: Available gilled & gutted, skin on or skin off fillets and whole.
