
Pacific Oysters
Crassostrea gigasSize: Buffets are 55-70mm, Standards are 70-85mm while Large are 85-100mm. (Sizes are based on the top shell measurement.) Habitat: Estuarine and marine; sheltered rocky shores and intertidal areas, attaches to rock and debris. Fishery: First introduced to Tasmania from Japan and now farmed extensively in Tasmania. Grows more quickly than the Sydney rock Oyster, reaching a marketable size within 1-2 years! Farmed in the North and South with the majority of farms on the East Coast of Tasmania! Remarks: Tasmanian waters provide an excellent environment for Pacific Oysters to grow due to its pristine waters fed by the great Southern Ocean. Selective breeding is underway which should lead to the production of Pacific Oysters with a faster growth rate, a higher meat to shell weight ratio and a more symmetrical shell. Pacific Oysters tend to spawn during the warmer months or due to drastic water temperature changes, during these times the meat tends to be emaciated and less flavoursome. Sizes in wild populations have been reported to a massive 450 mm in length and although sometimes harvested are considered by some as noxious pests.
