What bones do you use in your Seafood Stocks?

We use predominantly Blue Eye Trevalla bones (Hyperoglyphe Antartica) with good levels of Omega3 and great flavour.

What fish content do your soups contain?

Mures soups have a high seafood content over 80% of the Provencal Fish Soup is Fish Stock, Prawn Bisque contains 55% of Prawn Stock while the Smoky Fish Chowder has 55% of Smoky Fish Stock plus 5% actual Fish.

What type of fish do you put in the Smoky Fish Chowder?

We use skinless boneless Silver Warehou fillets (Seriolella punctata), which is chopped and gives that flaky consistency to the soup.

What is thickener 1442?

This is the thickener that we use in all our soups; it is a modified starch (hydroxy propyl distarch phosphate).

What is CL110?

CL110 is a proprietary carrageenan Registration #E407 vegetable gum which we use in the Smoky Fish Chowder.

Is the Orange Oil a natural product?

Yes! It is a natural orange oil; our products only contain natural ingredients, produced without the use of artificial colours, flavours or preservatives.

If you do not use preservatives, how do you maintain shelf life?

Our Seafood Soups go through a UHT process which consists of heating the product up to 140°C and holding it at this temperature for 15 seconds, then cooling to a filling temperature of around 15-25°C and packaged into aseptic containers.

How are your soups packaged?

Our soups are packaged in 1 litre containers, 12litres to a carton, 80 cartons to a pallet and 21 pallets to a container or 20,160 litres.

Are you soups available in different sized containers?

Our soups are currently only available in the 1 litre containers, however a aseptic bladder bags of 2 to 22.7 litres in size are available.

Is temperature a problem when sending product across the equator?

We prefer the product to be kept below 20°C and Classic Foods, our packaging partners, regularly send product across the equator and always ensure the containers are stored below deck.

What is your production capability?

We currently produce about 40,000 litres of UHT Seafood Soups per annum. By only sourcing bones from our own boat we are able to produce 200,000 litres. We will be able to produce more by sourcing bones from our new fishing vessel (Mures Dianna) producing up to 260,000 litres in our current premises.
