Executive Chef wins top Award!

Mures Tasmania is thrilled to celebrate the achievements of Executive Chef, Nathan Chilcott.  Chef Nathan recently won the Chef of the Year award for Victoria & Tas at the 2022 Restaurant & Catering Awards.

Nathan joined Mures Tasmania in 2021, and since his time in the role he has contributed significantly to the development of the three restaurants.  Having received Michelin training under Gordon Ramsay, Nathan worked for many years in Thailand as an Executive Chef with Marriott International, before returning to Australia with his family when the global pandemic hit.

Nathan believes in celebrating an authentic taste of place. He has spent many hours researching local coastal foraging spots for native plants that would highlight the very best attributes of the Tasmanian seafood showcased in Mures restaurants.  His method of approach to cooking is one of refined practicality, applying modern techniques to the food whilst maintaining a practical edge that ensures a smooth execution of the dish.

He is a passionate teacher & leader who believes in a hands-on approach and leading from the front line.  Nathan believes in his role he has achieved success if he can help his apprentices ultimately become better Chefs than he.
