Welcome to an Upper Deck hook-to-plate experience celebrating the excellence of Southern Bluefin Tuna
Carving & Feast.
Freshly caught in Tasmanian waters by Mures very own fishing vessel Selkie, the evening commences with a ceremonial parade honouring the magnificent Bluefin Tuna from which the feast will be crafted. This whole fish will be respectfully presented by Fisher Jock Mure, who guides guests through the ritual with a story shaped by wind and waves. As the carving commences, he shares the knowledge and reverence forged from a lifetime on the water, revealing the deep and enduring connection between the fisher and the sea.
Guests are then invited to gather and taste delicate samples taken directly from the frame, a moment that honours the freshness and quality of the fish. Then follows a four-course degustation, with each dish crafted from the freshly carved Tuna. Renowned for its vivid colour, refined texture, and deep umami character, the fish reveals its many qualities across the courses, with every plate celebrating both its natural flavours and remarkable versatility.

Throughout the evening, each course is thoughtfully paired with a Stefano Lubiana wine, chosen to echo the character of the dish and presented by a member of the Lubiana family who bring generations of insightful knowledge with them.
Tasmanian winemaking is more than a step-by-step process; it too is a ritual of its own, shaped by patience, intuition, and a deep respect for the many shifting moods of the land.
This hook-to-plate feast honours Tasmania’s celebrated seafood and viticulture, while acknowledging something more enduring, a lasting connection to place. Through food and wine, guests are not only invited to taste, but to recognise, revere, and quietly give thanks for the land and waterways that we call home.
