This August we’re bringing the Festival of Oysters to each venue
at Mures, a month-long, oyster extravaganza dedicated to
the excellence of Tasmanian oysters.
Four venues, one location, countless oysters, and endless tasty fun!
Here’s what’s happening:
Upper Deck.
Commencing 8th August, every Friday & Saturday night from 6pm to 8pm, keep your eyes peeled for the Tasmanian Oyster Co. Oyster Butlers, freshly shucking their incredible oysters directly at your table!
Or take on Upper Deck’s Oyster Tower special! Featuring three dozen of the finest Tasmanian Pacific oysters, served six delicious ways, it’s the ultimate indulgent tower. Available every day in August, perfect for sharing and celebrating!
Kelp Bar.
Quench your thirst for oysters at Kelp Bar with our Tides of the Island Oyster Shooters, with bold and briny concoctions where saltwater and spirit meet!

It’s oysters with a side of friendly competition! Don’t miss the Oyster Shucking Showdown where local industry pros battle it out for shucking glory. The best part? Anyone in the audience gets to enjoy free oyster tastings while you cheer them on!

Oyster Producers
Tasmania is renowned for our premium shellfish, and Mures is proud to work in collaboration with the following incredible Oyster producers:
Tasmanian Oyster Co, known as TOC, is a custodian of the Pacific Oyster industry. TOC manages, nurtures and controls Oyster genetics in its hatcheries, supplying farmers and itself high quality juveniles all over Australia. They are vertically integrated, being one of the largest farmers in Australia. Producing and supplying mature oysters to the domestic and international markets weekly makes TOC one of the most influential operators in the industry.
Melrose is our surname and that is where Melshell gets its name from. Ian, Don and Anne began farming pacific oysters here in 1984. Based at Dolphin Sands on the East Coast of Tasmania, our oyster leases are in Great Oyster Bay and the Swan River. We noticed gold shell oysters amongst our normal pacific oysters and thought we could get a point of difference if we collected these "red heads" maybe we could breed a family line of pure gold. We have.
